Roasted Tomatoes
The hunger-inducing aroma of garlic is wafting throughout the house -- waft, waft, waft -- and I can hardly wait to snag a spoonful of these delicious, delicious roasted tomatoes.
I've been roasting our garden tomatoes for the last five years, ever since I first discovered the recipe on Notes from a Cottage Garden blog.
One of the beauties of roasting tomatoes is that the flavor becomes super concentrated -- the essence of tomato.
Also, since they cook down in volume, three or four pans of tomatoes contract into a couple quart-sized Ziploc bags that can be easily stacked in the freezer, ready to pull out midwinter to amaze your taste buds. Not to mention your dinner guests.
We usually serve these over pasta. But they're pretty delicious just slurped from a spoon.

I guess it has been too hot. My tomatoes did okay when it was cooler but now I just have tomato plants and no tomatoes.

Thanks for stopping by and your sweet comment. Yes~ I took the summer off and I am trying to get back into a routine in life and my blog. Summer was so much fun this year. I was able to go visit both my girls and take a cruise with my husband.

I have a lot this year and this is my second time roasting some. They are delicious. I'm also dehydrating another batch of Roma tomatoes today. I did another 4 batches of Lady Ashburnham pickles on the weekend and gave two big boxes of cucumbers to the church and the ladies are making Lady Ashburnham pickles today also. You can get the recipe online. They are a big favorite around here.
