Blue Cheese Chicken
A super easy recipe from my mom, for those of us who like blue cheese. Love that mom.
4 boneless, skinless chicken breasts (we used two and cut them in half because they were humungous)
1/4 c. crumbled blue cheese
1/2 c. non-fat cottage cheese
3 cloves garlic, crushed
3 T. parsley, chopped (optional)
Mix the cheeses, garlic, and parsley, if you're using it. Place chicken breasts in baking dish, spoon cheese mixture over it, cover, and bake at 350 degrees for one hour. Serve with rice as it makes some delicious, soppy juices. Serves 4.
You can also substitute feta cheese, sun-dried tomatoes, and fresh chopped basil leaves for the blue cheese and parsley; I'm trying that version next.

This sounds good and it is nice to have a recipe that uses blue cheese for when you have some left over from making dressing.

Berji's Domain, thanks for coming to visit. I think I found your site through Rocks in My Dryer. The posting about a mouse, maybe? (Sorry I'm not really sure. I get to blog hopping and don't really know how I end up where I do sometimes!)
This recipe was good. The flavors were a bit overpowering for my taste, although that may just have been the type blue cheese I used. I would make this again just to add variety to my meals, but it's not one of my most prized recipes.
