Blue Cheese Recipes? Anyone?


I confess that the recipe that follows is not spectacular. But I must post it anyway, because I bought this humungous hunk of blue cheese a couple weeks ago. Seeing as I have been in possession of the cheese for several weeks and seeing as said cheese is still, well, humungous, I can only conclude that I overbought and throw myself on your mercy with the request that you send me your good blue cheese recipes.
And I'd feel guilty throwing myself on your mercy with my self-centered request if I didn't at least share this three-ingredient appetizer recipe
that goes together in minutes. It will whittle down that hunk of cheese just a tad, in case you happen to find yourself in the same over-ambitious cheese-buying predicament as moi.

BLUE CHEESE BITES
1 can refrigerated biscuits
1/4 c. butter
3 T. crumbled blue cheese
Place biscuits in two pie tins and cut into quarters. In small bowl, melt butter and blue cheese in microwave. Spoon over biscuit pieces, and bake at 400 degrees for 8 to 10 minutes.

You are absolutely soooo funny! I just love your sense of humor. The blue cheese bites look good...wish I could help you with recipes, especially since you are throwing yourself on our mercy! LOL! But I've never even bought blue cheese! I wouldn't know where to begin with a hunk of it! :) Thanks for the smiles though. (Does that make you feel better?)

I have several blue cheese recipes but they are packed already. For some reason JR thought packing those first was a great idea. What was he thinking?

Have you tried steak with blue cheese? This blue cheese sauce recipe is one of my family's favorites. I think mixing it with butter and cream mellows that bite that blue cheese can have. Anyway it would take care of a big hunk.

Although I've never tried this recipe, if I happened to have that amount of blue cheese, this would be a recipe I might try.

Fettucine with Blue Cheese Sauce

1/2 cup pine nuts
1 1/2 (4 oz.) pkg crumbled blue cheese, divided
1 1/2 cups half-and-half
1 (8 oz.) pkg. cream cheese, cubed
2 (9 oz.) pkgs. refrigerated fettucine, cooked
2 cups tightly packed torn spinach, cut into thin strips
6 ozs. thinly sliced ham, cut into thin strips
1/4 cup chopped fresh parsley
1/4 tsp. salt

Place pine nuts in a single layer on a baking sheet.

Bake at 350 for 7 mins or until toasted. Set aside.

Cook 1 cup blue cheese, half-and-half, and cream cheese in a saucepan over medium heat, stirring constantly, 5 mins. or until mixture is smooth. Keep warm.

Toss cooked pasta with spinach strips and next 3 ingredients. Pour blue cheese sauce over pasta and toss to coat. Sprinkle pasta with remaining 1/2 cup blue cheese and pine nuts.

Sounds yummy...but not low-fat! :) Let me know if you try it.

You cheese may be all gone, but I thought I would mention poached pear with blue cheese and walnuts.

I know it sounds odd, but if you google pear, blue cheese and walnuts, you will get lots of different types of recipes to show you I'm not crazy. The flavour combination is amazing!

Meredith, thanks for the blue cheese/pear/walnut suggestions. I'll bet the combination is wonderful and no, I don't think you're crazy! My parents have a gazillion pear trees on their property, and while the fruit isn't ripe now, I canned some last summer/fall. So I'm eager to check out the links you provided. Because, truly? I still have a fair amount of this hunk of cheese left :)
