Macaroons in Minutes



Who knew macaroons were so simple to make? I guess it's been years since I've made them. They go together in just minutes (if you don't count the 35 to 45 minutes of baking time). And even the littlest of kids can help, squishing the first three ingredients together in the bowl with their (clean) hands.

COCONUT MACAROONS

7-oz. package shredded coconut

1/3 c. flour

1/8 t. salt

2/3 c. sweetened condensed milk

1 t. vanilla

Mix first three ingredients in medium bowl. Stir in sweetened condensed milk and vanilla and mix well. Drop by teaspoonfuls onto greased (or parchment paper-covered) cookie sheets. (I actually fit all mine on just one sheet, since these don't spread much.) Bake at 250 degrees until golden brown, about 35 to 45 minutes. (Mine took 45.) Makes 24.

Ready for tomorrow's bake sale, anyone?

Now the real question: What do you do with the bit of sweetened condensed milk that's left over?

I'll have to find out if the family likes macaroons because that looks very easy and little daughter would love to help.

Sandra -- Really? Have you eaten this stuff from the can? It sounds a little gnarly to me, but then again I haven't tried it, so maybe I'm missing out on a great delicacy!

And Berji's Domain -- I'd love some details on chai. Probably I'm the only person on the west coast who's not really sure what chai is ;) Any elaboration? Thanks!

so REAL chai ;) is tea brought to a boil and then milk and sugar (or sweetened condensed milk-excellent when hiking) is added. Bring to a boil again and pour.
Masala chai is the same method only you add spices: typically green cardamom and any or all of ginger,black pepper, cinnamon, clove (and at coffee joints in the US, vanilla). It is really good on a cold day or for aiding digestion after a spicy meal.(Or for afternoon tea time!)
The amount of sugar and spices is pretty much up to you. The tea should be strong and then enough milk added to make it a nice latte sort of color.

Hi Lynn! Wow I haven't made macaroons in probably 20years! and I love them!!! must change that!lol As far as condensed milk I've never even tasted it outside of a recipe? never even occurred to me so I can't give a good answer! I might just try it next time now; must taste good if Sandra says eat it with a spoon? Have a great weekend - Sincerely, Jeannette

Lynn -- Just came back and read your shock at eating it from the can, so I went back to check that you WERE talking about sweetened condensed milk and not evaporated milk. You were, so ... yeah I did. Although I have to admit I haven't bought any in years. But in the 70's when I used to make that wonderful cherry cream cheese pie that was so popular then, I would scrape the Eagle Brand can and eat what was left before throwing it away. Hmmm. Am I the only one who did that? Oh well, I loved it! (I would compare it to a liquid creme brulee!)

Re. chai, Celestial Seasonings used to sell cans of spiced chai mix that I just loved, but can't find it any more.
