Onion Pie


Well you probably shouldn't try serving this to any onion haters in your house (and you know who you are), but if you happen to like the little bulbs -- and we do (see onion crop here) -- you should give this frugal quiche-like main dish a try. Notice it doesn't call for a traditional crust; rather you mix saltine cracker crumbs with butter and smush away.
I do love smushing.

ONION PIE
2 c. thinly sliced onions, separated into rings (2-3 medium onions)
2 T. butter
1 c. finely crushed saltines (about 28 crackers) (I whirled these in blender)
1/4 c. (1/2 stick) butter, melted
3/4 c. milk
2 eggs
pinch salt
dash pepper
1/4 c. shredded cheese (I used sharp Cheddar; Katy says just about any kind of cheese works)
dash paprika
Slice onions and separate into rings. Melt 2 T. butter in saucepan and saute onions until transluscent.

While onions are cooking, smash your saltines into crumbs. (The blender works perfectly for this. My crackers were even a little bit stale, but you couldn't tell in the finished product. So maybe this is a new use for all of our stale crackers.) Mix crumbs with the 1/4 c. melted butter and smush into bottom and sides of pie pan.
Place cooked onions in crust. Combine milk, eggs, salt and pepper and pour over the onions.


Sprinkle with cheese and paprika. Bake at 350 for about 30 minutes, or until knife inserted halfway between center and edge comes out clean.

Enjoy your pie.

I'd have to get over a mind-thing though...cause when I think PIE, I think SWEET. :) I'd have to re-route my brain to think onion casserole or something before I ate it though! LOL!

Thank you once again, Lynne. That's an idea to store.
Lori mentioned she thinks sweet for pies. Well here in Australia, meat pies are the most common. I always thought pumpkin pies (as in what you read in American stuff) would be savoury, the way we eat things, but apparently not?
I posted a recipe for the first time yesterday, Lynne. A Salmon Casserole my family enjoys.

YUM! I think I'll make this while I'm on a "Lynn's Recipe" roll for my veggie/farmer's market supper tomorrow night. I bet it'll be fantastic with some sliced tomatoes to accompany it.

And I have a tin (yes, a real tin) of crackers going stale as we speak.

Sorry to mislead you, Lynne!
I am not a pie maker. I have tried, but honestly, they are fairly cheap here and I am no pastry cook. One of my daughters makes a lovely family pie which I may post one day on my blog.
Meat pies, the little individual ones, are one of the most often bought take aways here. Especially at sporting fixtures, lunch on work sites.
The tastiest have the most meat! We have mince (ground beef), steak and onion, bacon,chicken...you name it. Here's a recipe I just copied. I notice it has vegemite in it :0) how Australian is that pie! Vegemite is a very salty savoury taste so you get the idea.

Aussie Meat Pies.
Makes 4

Ingredients
1 tablespoon olive oil
1 large brown onion, finely chopped
500g lean beef mince
1 tablespoon cornflour
3/4 cup beef stock
3/4 cup tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon barbecue sauce
1 teaspoon Vegemite
2 sheets frozen, ready-rolled shortcrust pastry, thawed
2 sheets frozen puff pastry, thawed
1 egg, beaten
Method
Heat oil in a saucepan over medium-high heat. Add onion. Cook for 3 minutes or until soft. Add mince. Cook for 4 minutes, stirring with a wooden spoon, or until browned.
Mix cornflour and 1 tablespoon of stock to form a paste. Add remaining stock. Add stock, sauces and Vegemite to mince. Bring to the boil. Reduce heat to medium-low. Simmer for 8 minutes or until thick. Cool.
Preheat oven to 220°C. Place a baking tray into oven. Grease 4 x 8cm base measurement pie pans.
Cut 4 x 15cm circles from shortcrust pastry. Use to line bases and sides of pans. Fill with mince. Brush rims with water. Cut 4 x 15cm circles from puff pastry. Place over meat. Press to seal. Trim. Brush with egg. Season.
Place pies onto hot tray. Bake for 20 to 25 minutes or until golden. Serve.

Thanks so much for the meat pie recipe, Ruby. It sounds delicious. Now I'll need to get out a trusty reference book and see how hot 220 degree C. is for those of us in the USA :) This will be fun to try.

Um..I forgot we use metric and Celsius. We call 180c moderate if that is any help. I was around in the dark ages when we used Fahrenheit but can't remember the equivalent. A lot of my trusty recipes still use old measures as they have come from Mum or some other older person.

Hi Lynn! Oh this onion pie sounds so good! I love, love, LOVE savory pies. I big puffy pink heart them!

BTW, I tried your yummy garlic parmesan rolls and they were a hit with the fam. Have you ever tried them with cinnamon/sugar? Kind of a cinnamon roll knock-off . . .

Karen, I'm so glad the fam liked the garlic cheese rolls. Of all the breads I've ever made, they are my very favorite. I have not tried them with cinnamon-sugar, but that's brilliant thought.
