Jello Poke Cake

Well it might not be diet food exactly, but this cake, recommended by Sandra at Add Humor and Faith, starts with a reduced-sugar Pillsbury devil's food cake that you bake, poke with a fork, then drizzle with sugar-free/ fat-free raspberry gelatin and top with an 8-ounce container of Cool Whip Lite.

I'm feeling pretty virtuous over here.

Sandra mixes light raspberry yogurt with the Cool Whip topping, but I got so excited I completely forgot about the yogurt.

Lynn -- I'm so glad you like it! But I hope you will try the yogurt in the topping next time -- we really feel it adds to the flavor. In fact, I have on occasion just mixed the cool whip and yogurt for a light dessert all by itself.

I love Jello Poke Cake. It reminds me of when my mom used to make it when I was young.

I love turtles and the name. It's the only reptile I would actually have as a pet.

My kids used to have a pet turtle (Yoshi) and when they played little league ball, they's make me bring him/her to the games in a shoebox so he/she could "watch" the game!

Oh yogurt with the topping would be excellent! Why haven't I thought of that before??

PS - My daughter, the critter lover, had a turtle once named Helga. LOL!!

Sherri, that's too funny that your kids made you bring the turtle to "watch" their ball games. Hope Yoshi enjoyed the action! We are actually thrilled with Shelley because we've had a few turtles in the past who go into the pond and we never see them again. We've only had this one for a few days, but she loves when you talk to her, and will swim nearby to where you are, as though she really wants to be friends. She's already the best turtle we've ever had :) Fun.

Turtles are my favourite animal! And Shelley is a perfect name. Mine was named Gala (the goddess of elegance, cute, eh?)

I have a lemon jell-o cake on my recipe blog (sister to my regular blog) that is similar but with lemon cake and jell-o (and no Cool Whip).

I smile whenever I think of poke cakes. I made the lemon cake for my daughter's wedding open house and had a professional cake maker rave about it.

She contacted my daughter later and asked for my recipe. I wonder if she told anyone it was made with a mix and jell-o? :)
