Green Salad with Raisins and Pine Nuts
Aaah, it's good to be married to a gardener.
Today's salad comes to you courtesy of Kahuna's lettuce which, as you can see, is thriving. This nice, simple salad is made with a variety of lettuces
picked just moments ago for your dining pleasure.Make that MY dining pleasure.
With the simple addition of minced garlic, pine nuts, golden raisins, and Parmesan cheese, it's a winner.
(recipe adapted slightly from an old issue of Better Homes and Gardens magazine; serves 4)
NUMMY SALAD
1 T. olive oil
1 clove garlic, minced (I used the stuff in the jar)
1/4 t. coarse sea salt
1/4 c. golden raisins
2 T. pine nuts
12 c. lettuce
1 T. freshly shredded Parmesan cheese
In microwave-safe bowl, place olive oil, garlic, salt, raisins, and pine nuts. Nuke for 20 seconds; stir and nuke for 20 more seconds. Add lettuce and stir to distribute ingredients. Top each salad with cheese.

I like the name " nummy salad." I bet it is very nummy. You would ask that question about dinner tonight. It is my son's 18th birthday and he wanted In and Out for dinner. :) I thought it sounded fun and you know how boys eat. I made a ice cream cake so that is dinner tonight, I might though really enjoy your nummy salad.
It sounds like you have a great birthday celebration planned, Farm Girl. And an ice cream cake, to boot -- even more numminess :) For that, do you make a regular cake and bake it in a large sheet pan, then roll up, and later fill with ice cream? Do tell!

I would have to substitute sunflower seeds for pine nuts because I got a nasty reaction from pine nuts. It's called PNS. Pine nut syndrome. There is lots of information on the web about it. It left a very strong bitter metallic taste in my mouth three days after eating then in pesto and it lasted 5 days and I was miserable.
My daughter and son in law had the same reaction.
I hope that by now they have removed the offending pine nuts off the market. They are the large one called P.Armandii pine nuts.

Wow, Julia, I have never heard of pine nut syndrome. I will have to check that out. So it sounds like it was some specific crop that was bad? Yikes. In the original salad recipe, they called for pine nuts or walnuts or pecans. I'm sure sunflower seeds would be good, too. Thanks for the heads up about PNS.

Oh you lucky girl! A gardener who raises asparagus AND all kinds of lettuce. You better keep that man, lol...
I haven't had pine nuts in years. Don't know why though. They seem perfect for this salad with Parmesan I bet it was delicious!
