Avocado-Roasted Pepper Salad

Mmmm.  Yummy salad. 

Make this. 

Official recipe title is Chopped Salad.  But that just doesn't begin to describe its numminess.

Recipe from the outstanding publication Nutrition Action Healthletter, which is filled with the latest scientific studies on healthy eating.

And we just won't mention yesterday's chocolate chip cookie dough ingestion.  'Kay?

Yeah for National Salad Month, Louise! And I agree, Meg, chocolate and butter are definitely good for you. Maybe not so much for the waistband of my jeans, but for the rest of me ;)

You do know that chocolate is a vegetable, right? It comes from cocoa BEANS! :~}

You asked if I liked my ice cream ~ yes! very delish! So did my hubby, my daughter and my granddaughters!
And since this is the first time I have ever owned an ice cream maker, I can't attest to their improvement over the years, but I think the $79 bucks hubby paid for my Christmas gift will be worth it ~ we eat a lot of ice cream and milk shakes!
