Sad Thai Noodle Dish

Hopes were dashed, sadly, as I bit into this promising-looking Thai Peanut Noodle dish with sugar snap peas and shrimp.
Turns out the noodles were dry, dry, dry as there was no peanut sauce in this recipe, only peanutty, soy sauce-y water that you cooked the noodles in.
Sigh.  I have to give this one a fail.
Anyone have a good peanut sauce recipe to share?

Oh Lynn, I wish I did, maybe Megan will stop by as I think she might. She makes a mean orange chicken. :) I always cheat and buy the package mix. :)
I hope you find one.

We love these two:

The first one is easy and we make it frequently. The second one takes a little longer, but I absolutely love the peanut sauce with it.

Aww, too bad because it does look really good. I don't have one yet, although I've seen a few good looking ones around the internet (none that I've bookmarked, sadly). You could probably just try some peanut butter and chicken stock with some other seasonings thrown in for a quick one, though.

I re-started your book and finished it the other day and I LOVED IT. It made me smile and laugh so many times. It was such an inspiration to me and I looked forward to being able to sit down with the baby because it meant I got to read your book. I think I will be reading it every year, just for a refresher. :)

Farm Girl, package mix is a good idea :) I think I might even have some bottled peanut sauce in the fridge I forgot about. Gotta do something to rescue the huge bowl of noodles.

Lara, thank you for the links! I printed out that second recipe; it sounds divine with the sesame oil and ginger. I hope some of that peanut sauce is in my very near future :)

Meg, thank you so much for your kind words about Queen of the Castle. :) You made my day. I can just imagine you snuggling with your little one. Sweet picture.

I have never made Thai food and I love to eat it! I just get ours from this cute little place down the street. You get props for attempting, I'm too intimidated.
