Potato-Cheddar Soup


Finally! A potato cheese soup I can love.
After my previous attempts left me pondering similes (like swallowing a cup of cement?), this version found my taste buds dancing and my ladle serving up seconds.
Best of all, you're likely to have all the ingredients you need already on hand.
POTATO-CHEDDAR SOUP
2 T. oil
1 clove garlic, minced
4 large potatoes, peeled and sliced
2 onions, peeled and sliced
2 c. chicken broth (I used 2 t. instant chicken bouillon mixed into 2 c. water)
1/2 t. salt
1 c. milk
2 c. grated sharp Cheddar cheese
In large pan, heat oil. Cook garlic, potatoes, and onions for about 10 minutes over medium heat, stirring occasionally. Add chicken broth and salt, bring to a boil, lower heat and cover for about 20 minutes. Vegetables should be well-cooked by then. Add milk. Heat through. Add cheese before serving and stir until melted (or nearly melted).

This looks wonderful, Lynn. I'll definitely try it, because potato soup is one of our favorites, but we've never had a great recipe to make at home.

Mmmmmm..this sounds good. The more I scroll through your blog, the hungrier I'm getting. I saw brownies coming up so I better stop ... I'm supposed to be losing weight!

I was just stopping by to thank you for your comment on my book blog re: Calvin Trillin. I have read some essays and seen quotes and always wanted to check him out. Then I saw this book and it seemed just so inviting and funny. I hope it as funny as I think it will be. Do you have other books by him you can recommend if I like this one?

Jenners, about Calvin Trillin books: In addition to Family Man, I loved Travels With Alice (Alice was his wife, who passed away a couple years ago; he wrote about their adventures eating around the world), About Alice, If You Can't Say Something Nice, Too Soon to Tell, Messages from my Father, and Piece by Piece. I just realized I haven't read Alice, Let's Eat, which is part of what he terms his "tummy trilogy." I don't think you can go wrong with his essay collections. They are wonderful. He also writes for the New Yorker magazine.

Just saw the Calvin Trillin comment and had to chime in. He's from Kansas City where we lived for 5 years. Desperate to find good eats, I checked out his book, American Fried, which takes you on a food tour of KC in 1972. Needless to say, it was a tad dated, but we were able to eat at three of the restaurants he mentioned. I may not agree with his politics, but I think we could eat together, no problem. ;)

FishMama, thanks for the heads up about Calvin Trillin's book American Fried. That's another one of his I haven't read yet. Will have to track that one down :)

Right now I'm rereading one of Peg Bracken's books, The Complete I Hate to Cook Book -- another oldie but goodie. And in spite of the name, I don't believe she really hates to cook as it's filled with food ides and recipes.
