As luck would have it, Lynn. I wanted so badly to whip up a batch of Strawberry shortcake last night and I just couldn't motivate myself enough to do it. If I had, here's the recipe I was going to attempt. It's a link I had used when I posted for Strawberry Thanksgiving a while back. (Strawberry Thanksgiving is on the full moon in June)
I made shortcakes last year and absolutely loved them! Here's a link: http://www.joanne-eatswellwithothers.com/2010/06/strawberry-shortcakes-with-balsamic-and.html
Joanne, your shortcake looks yummy. Thanks for the link.
The Bumbles, I'm happy for you Boston hockey fans. We San Jose fans are done with hockey for the year and have resumed our broadcast love with baseball ;)
Hi Lynn! I grew up w/ this recipe. We are shortcake snobs in my family - none of those spongey, fabricated angel food things they sell in packs at the store. We like our shortcakes more like a biscuit or scone. Here's my recipe!
2 c. flour 3 t. baking powder 3/4 t. salt 5 T. sugar (I use vanilla sugar) 1/2 c. shortening (I know, I know . . . .) 1 egg, beaten 1/3 c. milk
Sift dry ingredients into a bowl. Cut in the shortening with a pastry blender. Add egg then enough milk to make easily handled dough. Pat into a greased 9 " round cake pan. Sprinkle extra sugar over the top. Bake 15 - 20 min. at 450F, or until light golden brown.
We cut it into wedges and serve with sugared berries and whipped cream! On 4th of July, I've been known to use the same dough, adding flour so I can pat/ roll it out. I cut star shapes and bake them individually on a cookie sheet. Then, with a mixture of blueberries and strawberries and homemade vanilla ice cream instead of whipped cream, you've got yourself a real patriotic dish, sister! It's lovely.
Honestly, I use the recipe on the back of the Jiffy Bake baking mix box, and we love it.

ReplyDeleteI'm sorry these didn't work out!
Well, if it is any consolation, we are very excited about hockey pucks right now in Boston.
ReplyDeleteThanks for giving me a good laugh for the day :0)

My fist ever strawberry shortcake recipe failed miserably, so I found a great recipe on the Bisquick box and works fine.
ReplyDeleteGood luck.

Thank you, thank you, Karenpie. Anyone who admits to being a shortcake snob must have a fantastic recipe :) I am excited to give this a try.
ReplyDeleteAnd Sue, thanks for the Bisquick tip. I don't usually keep that on hand, but it sounds like a great option for when time is short.
I knew I could count on my internet friends for help.
