Mocha Truffle Cookies

These cookies are soft and chocolatey and studded with chocolate chips -- all you could ask for from a cookie. And now that the weather's turning cool, baking a batch might help keep your kitchen warm, too.

1/2 c. butter

1/2 c. chocolate chips

1 T. instant coffee crystals

2 c. flour

1/3 c. unsweetened cocoa powder

1/2 t. baking powder

1/4 t. salt

3/4 c. sugar

3/4 c. packed brown sugar

2 eggs

2 t. vanilla

1 c. chocolate chips

In large saucepan, melt butter and 1/2 c. chocolate chips. Remove from heat and add coffee crystals. Set aside to cool for 5 minutes.

In separate bowl, mix together flour, cocoa powder, baking powder, and salt. Set aside.

Into chocolate/coffee mixture, stir in sugar, brown sugar, eggs, and vanilla.

Add flour mixture to chocolate/coffee mixture. Stir in the 1 c. chocolate chips. Drop dough by tablespoons onto cookie sheets (either greased or covered with parchment paper). Bake at 350 degrees for 10 minutes. Makes about 30 cookies.

Thanks for visiting my site Lynn, I love homemade cookies. Though I love chocolate, I find myself eating too many too fast... These look so yummy. I'll try them when I have a church dinner or something to take them to :)
I made some the other day, oatmeal spice with crazins. I like raisins, but didn't have any and after making them with cranberry found they were really yummy too.

These sounds rich and amazing! Our whole family would love these.

One time I made a mocha recipe and **accidentally!!!!** used regular coffee grains instead of instant! What was I thinking? lol
