Love that cheese!<br /><br />In answer to your question on my site, Julie at http://acelebrationofourjourney.squarespace.com/recipes/2008/9/5/homemade-yogurt.html has a recipe for making the yogurt with 2% milk. I'm not sure about the lowfat or skim milk. I think there may not be enough fat in it to thicken properly.
